The holidays can be a trying time for those living a healthy and fit lifestyle. Regardless of how many workouts you complete, if you’re consuming more calories than you’re expending you’re pound to pack on some pounds. To me winter is all about getting strong and I certainly don’t want the delicious foods I enjoy and associate with the holiday season to wreck my hard work in the gym. To ensure no desserts packed with sugar tempt me, I always ensure Flapjacked protein cookies are on hand at any gathering I attend with friends and family. While I typically prepare these every other week to ensure I’ve a healthy and sweet snack available at all times, tossing in some cranberries means you’ve a perfect dessert for post workout and parties!
-6 tbsp of unsalted butter
-1 bag of Flapjacked cookie mix
-1/2 cup of dried cranberries (or other dried fruit)
-Bakery’s Joy (optional but recommended)
- Leave butter out of fridge to soften for 30-45 min (VERY IMPORTANT, see video below)
- Preheat oven to 350 F
- Whisk eggs and butter until creamy. Gradually add cookie mix and cranberries/dried fruit by spoonful to egg and butter mixture. Place dough by rounded tablespoon directly onto pizza stone/baking sheet coated in Bakery’s Joy
- Bake for 9-15 minutes or until edges are set
- Cool on 2-5 min before serving
